Salmon Cauliflower Sheet Pan

Sheet-pan meals are a great way to get dinner on the table quickly, and without too many dishes! With just a few short steps, you can have this on the table in under 35 minutes, that is full of flavour and spice!

We use cauliflower, a super versatile low carbohydrate, high fibre vegetable, that is arguably one of the most versatile veg there is. We mix it up with warm curry spices and fresh ginger, and pair it with our favourite fatty fish, salmon. Serve this fragrant dish with fresh spinach, and zesty  avocado salsa for a crave-worthy weeknight meal.

    Method

    1. Preheat oven to 200°C (400°F). Line a tray with baking paper.
    2. In a medium bowl, combine cauliflower, red onion, olive oil, curry powder, turmeric, and ginger. Stir to combine.
    3. Transfer cauliflower mixture to baking tray. Bake for 10 minutes.
    4. Remove from oven, and add salmon, topping each fillet with lime slices.
    5. Bake for an additional 10-12 minutes, or until the salmon is fully cooked through.
    6. Add cauliflower and salmon to a bed of spinach, topping with avocado salsa.
