Pad Thai Kale Salad

Kale is robust enough to handle dressings and won’t go limp at the sight of oil. This makes it ideal for lunchboxes, or as a ‘make ahead’ salad for dinner parties.

A note on cooking

I encourage you to embrace a freestyle way of cooking, and use this recipe as a guide. Don’t get too caught up in measuring things exactly — you can eyeball most things.

Cooking should be relaxing, unfussy and an opportunity for you to exercise your creativity. Don’t forget to taste as you go along, and use your intuition with flavours.

Trust your instinct, on whether it needs more of this, or more of that — cook to what you like!




    1. Remove the main rib/stalk and finely slice the kale leaves
    2. Scrunching and squeezing, use your hands to massage the dressing into the kale.
    3. Mix in the mint, walnuts and season to taste.
    4. Serve along with other salads and meats, or as a stand alone dish.
