A note on cooking
I encourage you to embrace a freestyle way of cooking, and use this recipe as a guide. Don’t get too caught up in measuring things exactly — you can eyeball most things.

Cooking should be relaxing, unfussy and an opportunity for you to exercise your creativity. Don’t forget to taste as you go along, and use your intuition with flavours.

Trust your instinct, on whether it needs more of this, or more of that — cook to what you like!




    1. In a heavy based frying pan, over a medium heat, add a glug of oil. Add the prawns and pak choi, and stir fry for about 4–5 minutes until the greens have wilted and the prawns have turned pink.
    2. Transfer to a serving bowl, top with avocado, chilli oil, a squeeze of lime and season with salt and pepper.
    3. Maybe even try eating it with chopsticks. If you’re not that good with chopsticks, it will only make you eat slower and savour each morsel—give it a go!
