This is a grown up hot chocolate — lusciously thick, smooth and bittersweet.

There have been requests to sell it at Christmas markets... it's that good!

Avoid drinking too late at night if you're sensitive to the caffeine in cacao, as it will keep you awake.

A note on cooking

I encourage you to embrace a freestyle way of cooking, and use this recipe as a guide. Don’t get too caught up in measuring things exactly — you can eyeball most things.

Cooking should be relaxing, unfussy and an opportunity for you to exercise your creativity. Don’t forget to taste as you go along, and use your intuition with flavours.

Trust your instinct, on whether it needs more of this, or more of that — cook to what you like!

    Method

    1. Add all the ingredients to a high powered blender and blitz till everything has emulsified and smooth.
    2. Add the chocolate mixture to a saucepan and bring to a boil over a medium heat, stirring continuously. It will thicken a bit more as it heats.
    3. Adjust the seasoning, serve and enjoy!
