    Method

    1. Heat 1/4 teaspoon ghee in a heavy based frying pan over a medium heat. Fry halloumi slices for 2–3 minutes on each side until golden.
    2. Serve the halloumi over a bed of lettuce and avocado.
    3. Finish with a spritz of lemon juice, chilli oil, tahini and season to taste.
