A note on cooking
I encourage you to embrace a freestyle way of cooking, and use this recipe as a guide. Don’t get too caught up in measuring things exactly — you can eyeball most things.

Cooking should be relaxing, unfussy and an opportunity for you to exercise your creativity. Don’t forget to taste as you go along, and use your intuition with flavours.

Trust your instinct, on whether it needs more of this, or more of that — cook to what you like!

    1. Slice endive at a diagonal into 1/2 inch strips—remove the core if you find it too bitter (I personally love it!).
    2. Slice the bacon into lardons and fry over a medium heat, until crispy and golden.
    3. Top the endive leaves with crispy bacon (make sure to drizzle with any bacon fat), and drizzle with fresh, creamy herb dressing.
    4. Add extras like avocado, walnuts and seeds if you fancy.
    5. This salad goes particularly well with fish

    Bon app! R
